    Plant-based Lemon Meringue Cupcakes

    Disclaimer. I am not (yet) fully plant based. But I do love eating lots of delicious vegetables, plant-based dishes and really limit my meat and dairy consumptions.  I do still eat eggs, they’re full of wonderful protein and nutrients. Obviously, I always buy local and free range. When making desserts and baking, I try to be creative and make them plant based as much as possible. My theory is that if that I’m going to eat animal products, I will enjoy them as they are – not as part of a cake batter.     Yesterday, you may have seen various reports about the banned Iceland/Greenpeace advert which shares the plight of the orangutans through Rang-tan’s story. If you have not yet seen it, I really recommend you go check it out. Seeing this and the #nopalmoilchistmas got me thinking about just how many products that contain palm oil. It is literally everywhere – food, cosmetics, cleaning products. Is this really all necessary? At 66 million tons annually, palm oil is the most commonly produced vegetable oil.
